A place far from the usual tourist trail in Paris, located in the Bercy district , where much of the commercial, cultural and social life of the Aveyron region comes together. **L'Auberge Aveyronnaise** is a hidden gem, serving outstanding regional cuisine and traditional dishes from this beautiful part of southern France.
During our visit, we tried the famous Aligot , a traditional mashed potato dish made with fresh Tomme cheese, cream, butter and garlic, served on this occasion with **saucisse** (a traditional sausage). We also enjoyed a generous salad with cured ham and Roquefort cheese, followed by a delicious skate wing with vegetables . To finish, we had an authentic Italian coffee.
The atmosphere is relaxed, the service is warm and welcoming, and the presentation of the Aligot is an experience in itself. The waiter stretches the cheese-filled mash until it forms long, silky ribbons, showcasing the remarkable elasticity created by the generous amount of fresh cheese. It's a tradition well worth seeing.
